For the Salad:
2-3 persian cucumbers, chopped
4 scallions, thinly sliced on the bias
1 c. cilantro (leaves + stems), chopped
1 c. parsley, roughly chopped
1/2 c. cherry tomatoes, halved
3 tbsp capers, rinsed and chopped
For the Dressing:
2 tbsp lemon juice
2 tbsp good quality olive oil
S & P to taste
Place all of your ingredients in a bowl and toss well to combine. Season with salt & pepper to taste and that's it! Super easy and ready to enjoy in minutes.
