A satisfying and filling oatmeal pancake that comes together in minutes! Made with oats + almond meal and topped off with bananas, walnuts, and a maple yogurt blend.

Start by placing all of the oatmeal ingredients in a blender or food processor. Pulse until the mixture is well combined and smooth. Leave the mixture for roughly 3 minutes so it has time to thicken.
In the meantime heat a nonstick pan over medium heat. Add a teaspoon of coconut oil or nonstick cooking spray to coat the pan. Ladle the mixture into the pan, roughly 3-4 tbsp, let it bake until the bottom part of the pancake turns golden-brown and the top starts making bubbles. Gently flip and cook for another 2 minutes, or until golden brown, on the other side. Set the pancake aside and repeat until all your batter has been used.
To serve, center your pancakes on a plate. Start by placing a dollop of yogurt on top of the stack, followed by the slices of banana. Drizzle with as much maple syrup as you like and then sprinkle the crushed walnuts on top.
