Mediterranean Wheat Berry Salad
Preheat your oven to 400f. Place your cubed beets in a roasting pan, coat with a drizzle of olive oil and a pinch of salt. Cook for 30 minutes or until they pierce easily with a fork.
In the meantime cook your wheat berry. Place the wheat berry and water in a medium sauce pan and bring to a boil over medium high heat. When it reaches a boil, cover and reduce the heat to medium low. Simmer for 30-35 minutes. Check the wheat berry after 30 minutes (this grain should have a denser/chewier texture when cooked) however if you'd like it a bit softer cook for 5 more minutes.
Strain any excess water from the wheat berry and place it in a large mixing bowl. And in all the remaining salad ingredients and garnish with the lemon juice, olive oil, and seasoning. Toss well to coat.
This dish is really hearty from the wheat berry and works well as a side or stand alone meal. I often keep a big batch in my fridge to eat as a snack or I'll add it to a larger salad for a better depth of flavor. This is a great dish to make ahead of time as the flavor continues to develop in the fridge. Hope you enjoy :)
