Ingredients 2 Eggs 2 Egg whites 1/2 Cup greek yogurt 1 Handful fresh mint, roughly chopped 1/2 Mango, roughly sliced Juice of 1 small lime 1 Tbsp shelled pistachios S & P to taste
Preheat the broiler. In a large bowl mix together eggs, 1/4 cup greek yogurt, mint, lime juice, and salt & pepper.
Place an ovenproof, nonstick skillet on the stove over medium heat and coat it with nonstick spray or wipe with oil. Add your egg mixture to the skillet and gently arrange the mango pieces around the top. Allow to cook until it is set on the bottom and around the edges, about 5 minutes.
Next, transfer your skillet to the oven and heat until the top of the tortilla is set and golden brown, roughly 3 minutes. To serve, either eat right out of the pan or cut into 4 wedges and transfer to a plate. Top with the remaining 1/4 cup yogurt and sprinkle with pistachios.
