For the Salad:
2 red beets, cooked & cut into quarters
1 small orange, peeled and sliced
1/4 c. of your favorite yogurt (I used a sweetened cashew yogurt)
1 tbsp lemon juice
1/2 avocado, sliced
2 tbsp Pistachios
Start by placing your cooked beets in a bowl along with the lemon juice. Stir well to coat the beets with the juice and set aside. To plate your salad start by drizzling the yogurt in a circular motion on the plate. Next scatter your orange slices on top of the yogurt. Then add your beets along with the lemon juice. Garnish with the avocado slices and pistachios.
Your ready to enjoy!
If you're presenting this salad to someone or you're a perfectionist follow my assembly instructions above and keep in mind that the beets will stain the other ingredients, so place them strategically. If this salad is just for you or you're in a hurry, simply throw all the ingredients in a bowl and give it a good toss to combine...it'll be just as delicious!
