Makes: 10 Small Muffins

3 large ripe bananas, mashed
1/2 c. coconut sugar
3 tbsp coconut oil
2 tbsp flax seed meal mixed with 1/4 c. warm water
1/2 tsp liquid stevia
1 c. flour or 120g
1/2 c. bran flakes
1 tsp cinnamon
1/2 tsp maca powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/8 tsp nutmeg
1/2 c. walnuts, roughly chopped(optional)
Preheat oven to 375f.
First combine the flax seed meal with warm water and set aside for 5 minutes to thicken.
In a large bowl, sift together all of your dry ingredients, excluding the walnuts, and set aside.
Using a mixer set to medium low, start by beating together the coconut oil and coconut sugar. After a few minutes add in the remaining wet ingredients(bananas, flax mixture, and stevia). Beat for another minute more or until well combined.
Combine your mixtures by gently folding the dry ingredients into the wet mixture 1/3rd at a time. If you're adding the walnuts, fold them in with the last third of the flour mixture. Don't worry if you still see a few clumps of the dry ingredients in the mixture, as you don't want to over mix the batter.
Coat the muffin tin with oil or line with parchment paper. Scoop the mixture into the tin so they're almost reaching the top.
Bake for 15 minutes at 375f then reduce the heat to 350f and bake for an additional 8-10 minutes. To check if the muffins are done, either insert a toothpick and see if it comes out clean or press a finger to a muffin top- if it springs back they're done!
Remove from the oven and let cool in the tin for 10 minutes, then you're ready to enjoy!
