Almond and Oatmeal Pancakes
Healthy and delicious almond oatmeal pancakes. Served with a blueberry chia seed topping.

Start by placing the almond flour and oatmeal in a blender or food processor. Blend until the oats have broken down into a flour. Then add in the remain pancake ingredients. Blend the mixture for 30 seconds so it is well combined then let the mixture sit for roughly 3 minutes so it has time to thicken .
In the meantime a small sauce pan over medium high heat. Add all of the blueberry topping ingredients, excluding the chia seeds, and bring to a boil. Once boiling reduce the heat to low and let simmer for 10 minutes and then add in the chia seeds.
While the topping is simmering cook your pancakes. Heat a nonstick pan over medium heat. Add a teaspoon of coconut oil or nonstick cooking spray to coat the pan. Ladle the mixture into the pan, roughly 3-4 tbsp, let it bake until the bottom of the pancake turns golden-brown and the top starts making bubbles. Gently flip and cook for another 2 minutes, or until golden brown. Set the pancake aside and repeat until all your batter has been used.
To serve, stack your pancakes on a plate and spoon over the blueberry chia topping. Your ready to eat! Enjoy those pancakes and feel like you ate something healthy because hey they are made out of oats after all ;)
